Barkeeper

A barkeeper mixed and served drinks behind a bar in a saloon, hotel or tavern; barkeeper, barkeep and bartender all mean the same job.

A barkeeper served beer, wine and liquor, mixed drinks and kept the bar stocked. Historically the work had a low reputation.

In 1900 enumerators were told to state service occupations exactly, giving saloon keeper or bartender as examples, and not to accept the word clerk from a man who really tended bar: some bartenders described themselves as a clerk in a wine store, but the nature of the work decided the entry.
