Rusticus is Latin for a peasant or farmer, a country dweller who worked the land; as an adjective it means rural.
Rusticus means of the country and, as a noun, a peasant or farmer. Registers use it for the many village families who lived from the land.
Agricola also means farmer, so one family may be described with either word. Note the exact word your priest chose each time, since a change can hint at a change in the family's standing.
