Distiller

A distiller made whiskey, rum, brandy or other spirits by distilling fermented liquor, or owned or ran a distillery.

Distillation separates the parts of a liquid mixture by boiling it and condensing the vapor in a still. Applied to a fermented mash of grain, fruit or molasses, it concentrates the alcohol into hard liquor.

The title can mean a skilled worker who ran the stills or the owner of the distillery, so look at the rest of the record, such as the value of real estate, to tell which.
